2. Add up to 12 oz of water (optional), along with the seasoning and the curing salt
3. Mix until the meat block becomes tacky, about 6–8 minutes
4. Regrind through a 3/16" plate and stuff into casings
5. Process in a smoker or controlled heat until your target internal temperature is reached (for safety and flavor)

*For a signature tang and a reduced pH product, you may add a starter culture or encapsulated acid after grinding but before stuffing. This is an optional step some processors use to shape tang and texture.
