This Nicaragua Segovia dark roast results from a collaboration between Roastery 7 and the Mindo Cloudforest Foundation, combining meticulous sourcing with a forest restoration mission. The program notes that producing and distributing one pound of coffee typically requires several pounds of CO2; for every pound sold, a portion supports reforestation in Ecuador’s Mindo Cloud Forest. As the trees mature, they are projected to remove roughly 54 pounds of CO2 per pound of coffee produced, helping tilt the balance toward sustainability.

Beyond the climate story, this reforestation effort supports biodiversity, helps stabilize soils, and aids water tables. Local landowners collaborate on forest care and renewal, creating jobs and contributing to community resilience while restoring native habitats that benefit birds and other wildlife.

The Nicaragua Segovia beans are bold and deep, with a chocolate backbone and bright touches of apricot, fig, and spice that linger on the palate. Sourced from PRODECOOP, proceeds help improve living standards and fund programs in medical care, education, and environmental sustainability for member farmers.

The coffee is small batch roasted in a vintage Probat drum roaster upgraded with energy efficient ribbon burners, delivering consistent results while keeping waste and emissions in check. Packaging uses fully biodegradable bags, and the roastery emphasizes composting coffee grounds and waste reduction as part of a broader carbon negative approach.
