Duros — also sold as duritos, duritos wheels or "Mexican wheat pasta" — are hard little pinwheels that puff into airy, crunchy wheels in seconds of hot oil. They're the street-snack behind a wave of TikTok videos, and the raw wheels ship brilliantly, which makes them a perfect UK import. Here's how to cook and dress them properly.
What they are
Pressed wheat-flour pasta shapes (wheels, pinwheels, chicharrón sheets) sold hard and shelf-stable. On their own they're nearly flavourless — the point is the puff and what you put on it.
Three ways to puff them
- Oil (the classic): 190°C, a few at a time, 5–10 seconds until they stop expanding. Drain on kitchen paper.
- Air fryer: brush lightly with oil, 200°C for 3–5 minutes, shaking once. Less dramatic puff, far less mess.
- Microwave: works in a pinch (60–90 seconds) — uneven but oil-free.
The dressing is the whole game
